date-paste

Ingredients:
3 cups (1 lb. or 450 gr.) pitted dates
1 1/2 cups water
1 tsp. pure vanilla extract
Pinch of salt

Directions
Place pitted dates ( any kind will do) into 1 quart (1 liter or 4 cups ) Mason type jar; pour enough water to cover dates; cover jar and let dates soak overnight, or for 12 hours or longer.

Next day, drain water and reserve. Empty dates and about 1/2 cup of water into a food processor bowl. Process dates adding more water, (few tablespoons at a time) until dates are all blended and puréed, for about 3-4 minutes.

Add vanilla extract and salt; continue processing adding more water if needed until turns into a smooth and creamy paste. The longer you process, the smoother will be.

Return date paste to the mason jar and store tightly covered in the refrigerator for up to 3 months.

Use this natural sweetener in your recipes in place of sugar,  as needed.

Enjoy!
