Jambalaya Rice - Vegetarian Dish

 

Jambalaya Rice; The perfect dish for the spicy food lovers.




If you love spicy foods, this Jambalaya rice dish will delight your senses. It's easy to make and it's the perfect dish for a vegetarian diet. You can serve as is or you can  add meat (sausage, chicken) for extra protein but if you're are opting of keeping it vegetarian, the beans will supply the protein needed and you will find it absolutely delicious just the way it is.

The heat in this dish comes from the Creole spice mix ( see recipe bellow for my homemade spice mix) which contains cayenne pepper. I don't like it very hot, just mildly spicy but you can add more cayenne pepper if you prefer more heat.





Jambalaya Rice Recipe

INGREDIENTS

2 tbsp. oil

1 onion (or half red) chopped

1/2 tsp sea salt

3 cloves garlic, minced

2 celery diced

1 medium red bell pepper, chopped

1 cup diced tomatoes

3 tbsp. tomato paste

3 tsp Creole seasoning (see recipe)

1 bay leaf

1 tbsp. vegetable stock powder mix*

1 19-oz  (540 ml.) can of red beans, rinsed and drained

1 cup long-grain white rice, rinsed

3 cups water or vegetable broth

 

 

DIRECTIONS

Heat oil in a medium-sized  pot.  Add the chopped onion, sprinkle with  salt and sauté until becomes translucent.

Add the garlic, stir for a few seconds then add the  celery, bell pepper, diced tomatoes and tomato paste. Sprinkle in the creole seasoning (see recipe), add bay leaf, vegetable stock mix and 1 cup of water. Stir, and cover the pot and let it cook  on medium heat for 7-10  minutes, or until the veggies become tender.

Next add the beans, rice and the remaining 2 cups of water. Bring pot to a boil,  stir and reduce heat to LOW (the lowest setting possible), cover and set timer for 15 minutes. 

Remove the lid, stir with a spoon and serve. If there is extra liquid cover pot with the lid, the heat will help absorb the extra moisture into the rice. This jambalaya is best when it’s slightly saucy, rather then dry.

* Omit the vegetable stock mix if you are using the broth.

 

 



Leia's CREOLE Seasoning Mix

This make approximately 1/4 cup of spiced. If you need a bigger quantity, use double of everything.

INGREDIENTS

1 tbsp. garlic powder

1 tbsp.  onion powder

1 tbsp. sweet paprika powder

1 tsp smoked paprika

1 tsp dried thyme

1 tsp dried oregano

1 tsp dried basil

1 tsp dried rosemary

1 dry bay leaf

1/2 tsp cayenne pepper (use more for  more heat)

1/4 tsp ground black pepper

1/2 tsp sea salt

 

INSTRUCTIONS 

Place all of the spices in a spice of coffee grinder.  Pulse until you get a fine powder. Store in an airtight container  in a dark place.

 Makes about 1/4  cup.
