This is a quick and easy recipe to whip up and enjoy in no time at all. Perfect for a snack or with your morning coffee. Serve it warm with a dab of butter.

After all the sweets  we had over the holidays, I really felt like having something savory. These Buttermilk Biscuits were the perfect snacks! 

Enjoy the warm with a dab of butter or even a little jam on top.

Flaky Buttermilk Biscuits Recipe


INGREDIENTS

2 cups all-purpose flour plus extra for hands and work surface

1 tbsp. baking powder

1/4 tsp baking soda

3/4 tsp Himalayan salt

1/2 cup unsalted cold butter, coarsely grated

1 large egg 

3/4 cup to 1 cup buttermilk cold, plus more for brushing

 

For Topping:

2 tbsp.  unsalted butter, melted

1 tsp flaky salt or Himalayan salt


 DIRECTIONS

Preheat the oven to 375 F

Line a baking sheet with parchment paper.

In a large bowl, stir  together flour, cornstarch,  baking powder, baking soda, and salt. Grate the cold butter into the flour using the coarse side of a box grater. Using a rubber spatula, stir the butter into the flour mixture until evenly incorporated. 

In a small bowl or measuring cup, combine the egg and buttermilk, and whisk until well combined.

Stir the buttermilk mixture into the flour and mix with a rubber spatula until a comes together into a dough. Don’t over mix here! 

Remove dough onto a lightly floured surface and gently knead, a few times, just until it comes together. (If there is still dry flour, you can add a bit of more buttermilk) Then gently pat the dough into a 1/2-inch thick rectangle. Fold dough in thirds, like a letter, then in thirds again.

Roll out the dough on a floured surface to  an inch thickness and using a  2 1/2-inch round  cutter, cut out as many circles as you can. (Try not to twist the cutter at all, instead press firmly down and life straight up. Twisting can reduce the flakiness and rise.) Gently re-roll any scraps of dough and cut out more biscuits.

Place the biscuits on the prepared baking sheet.  Brush the biscuit tops with buttermilk. 

Bake at  375 F for 17-20 minutes or until tops are golden brown. Bottoms will be lightly browned. 

Remove from the oven, brush tops with butter, and sprinkle with salt, and enjoy.

Makes: 10 biscuits
