These savory muffins make an excellent snack. Easy to throw together using items that you might have in your refrigerator already. So simple to make, yet so soft and delicious! A great addition to any breakfast or as a little snack to curb your hunger anytime.
INGREDIENTS
8 oz. (250 gr.) cottage cheese
1 tsp sugar
1/3 tsp salt
2 tbsp margarine, soft
2 eggs
1/8 cup milk
3/4 cup all-purpose flour
1-1/2 tsp baking powder
DIRECTIONS
Add cottage cheese, sugar and salt to a mixing bowl. Beat together to blend and break up the cottage cheese.
Beat in the soft margarine until blended. (If you have still showing pieces of cottage cheese, it's okay).
Beat in eggs, one at a time, until incorporated.
Stir together the flour and baking powder; add it to the mixing bowl alternating with the milk.
Grease and flour 8 muffin cups. Using an ice cream scoop, divide batter between the muffin cups. (My pan is 12 cups, so I add 1/4 inch water into all the empty cups before introducing pan into the oven).
Bake in preheated oven at 375 F for 20-25 minutes or until edges start to brown and toothpick inserted in the center comes out clean.
Remove muffins from the pan to a cooling rack and let cool slightly before eating.
Makes 8 muffins
