What do you do when you have a bunch of over ripped bananas? One option, and my favorite one is to bake some banana bread!
Introducing, the perfect recipe to use up your bananas!
There are different banana bread recipes, (I have a few) but this recipe is by far my favorite one.
It's a soft, moist and chocolaty banana bread that, in all honesty should be called a banana cake not bread. It really is that good! Yet, it's really easy and fast to make, even for the novice baker. Great with coffee or just as a little mid-afternoon snack.

Chocolate Banana Bread Recipe
INGREDIENTS
1/2 cup margarine
1/2 cup brown sugar
2 eggs
1 cup mashed bananas (about 3)
1 tsp vanilla
1-1/2 tsp baking powder
1-1/2 cups all-purpose flour
1/4 cup milk
1/2 cup dark chocolate chips, (plus a few more for topping )
2 tbsp. cocoa powder- optional- see NOTE bellow
DIRECTIONS
Line a 6-in by 8-in loaf pan with parchment paper. Set aside.
Mix margarine and brown sugar until light and fluffy. Add eggs, one at a time mixing well after each addition.
Add the mashed bananas, vanilla and baking powder. Mix well. It might start to separate but don’t worry, just start adding the flour alternating with the milk until batter becomes smooth and creamy.
Remove beater and using a spatula fold the chocolate chips into the batter.
Spoon batter into the prepared pan. Sprinkle some more chocolate chips on top if you are using (I used chopped up chocolate bark with pumpkin seeds that I just happen to have on hand), and bake in preheated oven at 350 F for 40-50 minutes or until toothpick inserted in the center comes out clean.
Remove to a cooling rack and let cool completely before slicing.
NOTE:
For a rich chocolate taste, replace 1 tablespoons of flour with 2 tablespoons of cocoa powder then sift into the rest of the flour before adding it to the batter.
