Cheesy Pretzels with seed topping Recipe






INGREDIENTS

Starter:
1/2 cup water
3 tsp dry active yeast
1 tsp sugar
1 cup sugar

Dough:
1 egg
1/4 cup oil
1/2 cup milk, lukewarm
1 tsp salt
3 to 3-1/4 cups flour

Filling:
1/4 cup butter, softened
1/2 cup grated Monterey jack cheese ( 125 gr.)

Topping:
1 egg
1 tbsp milk
1/4 cup Seed mix ( sesame, black sesame, poppy seed, toasted sesame seeds, carraway seeds)





DIRECTIONS

For the starter place water into a small bowl; add yeast and sugar; whisk together then whisk in 1 cup of flour. Set aside until bubbly and has increased in volume.

For the dough, add egg into a small bowl and slowly whisk in the oil, then the milk. Add to the yeast mixture and whisk together to blend.

Place the mixture into a mixer’s bowl with a hook attachment. Add slowly the flour and the salt and let the dough knead. Add more flour if needed to get a soft, malleable and slightly sticky dough.

Remove dough and grease lightly and place it into another bowl. Cover with plastic wrap and let rise until double in size, for about 1 hour (depending how warm your kitchen is , it may take longer)




Punch dough down on to a lightly floured board. Divide into 12 pieces and form them  each into a ball.

Taking one ball at a time, using your fingers flatten them out into an oval, rush with melted butter, sprinkle with about 1 tablespoon of grated cheese. Roll it up as a jelly roll, sealing edges, then roll on the board into a 12 inch long rope.  Holding both ends, twist them in the opposite directions then bring ends together to form a circle. Seal the ends and fold under. Place them on 2 parchment paper  cookie sheets, leaving about 1 inch space around them.

Cover with plastic wrap and let rest for 30 minutes. 

Whisk egg and milk together and brush top of each round pretzel then  sprinkle  the seed mixture on each top.

Bake at 350 F for about  20-25 minutes or until become light brown on top.

Makes: 12 round pretzels


Enjoy them warm or if you think you have too many, they can be freeze and reheated before serving.
