My daughter loves to make pancakes and she is very good at it too. Her pancakes come out light and fluffy...She not only likes making pancakes but she makes the best pancakes ever! Me, I could never get them quite as fluffy as hers, until I realized, I was over mixing the batter. Now (that I don’t over mix) they are thick and fluffy! Try this recipe yourself and enjoy delicious and fluffy pancakes.
You can make breakfast more fun for the young ones in the family by making some in different shapes that you know kids would love.
Our grandson likes pancakes. This was specially made just for him and topped it with his favourite fruit.
Ingredients
1 cup flour
1 tsp. sugar
2 tsp. baking powder
1/4 tsp. salt
1 egg
1/4 cup oil
3/4 cup milk
Directions
In a medium size bowl combine flour, sugar, baking powder and salt. Set aside.
In another bowl, using a fork, whisk together egg, oil and milk.
Pour it all into the flour mixture and mix with the fork just until all moistened. (Do not over mix).
Heat a non-stick pan on medium high heat. Drop batter with a small ladder into the hot pan. Turn over when bubbles pop on top and cook until golden brown.
Place them into a covered dish to keep them warm until all pancakes are done.
Serve them hot with sliced fruit, maple syrup and whipped topping, like cool whip or whipping cream.
Try also other toppings like almond butter, peanut butter or cheese whiz.
Makes 8 pancakes
