Chicken breast seasoned with garlic spices, baked with potatoes, carrots and beans is got to be one of the fastest and easiest chicken dinners...it could be very well called "one-dish meal". It is not only easy to make but also healthy, cheap and incredible tasty.

Ingredients:
4 tbsp. olive oil
3-4 chicken breast, halved
1 tsp. sea salt
1 lemon, juice
4 cloves of garlic, minced
1/2 tsp. freshly ground black pepper
1 tsp. Montreal steak seasoning
1/2 lb. green beans
8-10 small potatoes, quartered
6 young, thin carrots, chopped or baby carrots
Directions:
Grease a casserole dish with a tablespoon of olive oil.
Sprinkle breast halves with a little salt; arrange them in the centre of the casserole dish.
In a small bowl mix together the remaining olive oil, with the salt, lemon juice, minced garlic, black pepper and Montreal steak seasoning.
Chicken breast with all the "trimmings"…ready for the oven
Brush some of the marinade over the chicken breast.
Add beans, quartered potatoes and chopped carrots to the remainder of the marinade; toss to coat.
Arrange the potatoes, beans and carrots around the chicken breasts.
Cover with an aluminium foil and bake covered at 350 F for 60 - 75 minutes or until chicken is cooked through. (Depending on the thickness of the chicken it may take more time to bake; check doneness by removing one chicken piece and cut in half to make sure centre is cooked through).
Remove from oven. Serve warm.
Makes: 3-4 servings
TIP; Chicken can be brushed with the marinade before hand and refrigerated it overnight (even better for flavour). Next day, just add the vegetables to the pan and pop the casserole in the oven to bake together.
