Bruschetta is a simple and delicious Italian appetizer that requires little preparation and can be ready in minutes to enjoy, before a meal or even as a light supper.
Once in a while, when we do go out to eat (usually it's an Italian or Mediterranean restaurant) we like to enjoy some bruschetta while waiting for our meal, but I found it quite filling, as I can never finish my plate of food afterwards...but then again, I have a made lunch for next day :-) so no biggie. I still like to enjoy some bruschetta when we go out but I do enjoy making it at home whenever I can. It's fast, easy and delicious!

Ingredients:
5-6 tomatoes, diced
4 garlic cloves
3 green onions, chopped
4 tbsp. olive oil, plus more for drizzling on top
1 tsp. basil
1 tsp. Italian seasoning
2 tsp. parsley, minced
1/2 tsp. salt
1 ciabatta banquette
1/2 cup crumbled feta cheese
Directions
Place diced tomatoes into a medium size bowl. Add crushed garlic, chopped green onions, olive oil, basil, Italian seasoning, parsley and salt. Stir together, gently until all mixed, then place bowl in the refrigerator for 2 hours for the flavours to blend.
To serve, slice baguette, in bias, and arrange slices on a baking sheet. Drizzle each slice with some olive oil.
Place spoon full of the tomato mixture on each bread slice, then sprinkle some crumbled feta on top.
Bake in the oven at 350 for 10-12 minutes, or until edges start to brown.
Makes: 20-25 bruschetta
