Muffins are one of the easiest things to bake. The are a breeze to make and in no time at all, you can have freshly baked home made muffins to enjoy. Got to love that :-)
This Banana-Date ones are specially great. Using dates as sweetener, minimum amount of sugar and natural ingredients, they are a healthier choice. With a denser, heavy texture and rich in fibre, they are perfect for breakfast or any time of the day when you crave a snack.

Ingredients:
1 cup natural bran
2/3 cup milk
2 ripped bananas, mashed ( about 3/4 cup)
1 egg, whisked
1/4 cup brown sugar (or 1/2 cup coconut sugar)
1/2 tsp. salt
1/4 cup butter (or margarine), melted
1-1/4 cup whole wheat flour
1-1/2 tbsp. baking powder
1/2 cup chopped dates
3/4 cup chopped pecans, divided
Directions:
Place natural bran into a small bowl; add milk; stir and let sit until milk has all been absorbed.
Add mashed bananas to a medium size bowl; add egg, sugar, salt and melted butter; stir to mix.
In a small bowl stir together flour and baking powder.
Add bran-milk mixture to the mashed banana. Add flour, dates and half the pecans. Stir together until all is moistened.
Spoon mixture into 12 paper lined muffin cups if you wish or just a greased muffin cups. Divide the remaining pecans among the muffins and sprinkle it on top. (I like the taste of the toasted pecan tops so I always a little more).
Bake at 375° F for 20-25 minutes, or until toothpick inserted in the centre comes out clean.
Remove to cooling rack and let cool.
Makes:12 muffins
