This is a light dish, simple and easy to make, and supper fantastic recipe to have for the summer.
This is one of the first dishes I learned to make from my mother who is Hungarian. It is not only easy to make but also quick and delicious. Great to make it over the summer months when you can find fresh peas at the farmer`s market or from your garden, if you have one. I have no garden, and most of the time, no fresh peas handy so most often I use the frozen peas. Tastes equally delicious.

Ingredients:
1 tbsp. vegetable oil
1 tbsp. sugar
3 tbsp. freshly chopped parsley
2 cups water
1-750 gr. (26 oz.) package of frozen peas
1 tbsp. vegeta seasoning, or similar
1/4 tsp. black pepper
Roux:
2 tbsp. vegetable oil
2 tbsp. flour
Directions:
Place oil into a medium size pot and place pot on medium heat. Add sugar and let it melt until becomes light caramel color. Stir in the parsley; pour water on top and cover quickly with a lid to prevent splattering; stir to dissolve sugar.
Add the frozen peas and seasoning. Cover and let cook until peas are soft.
In the meantime, make a roux; place oil into a small pan. When hot, add flour stirring quickly together until all mixed (do not let flour to brown as it will come bitter and quite unhealthy for you). Add slowly water while mixing to break any lumps adding enough water to make a light sauce (should be the thickness of heavy cream).
Pour sauce over the peas and cook for 2 minutes longer, until all bubbly. Remove from heat and serve.
Serve on it's own or with your choice of vegetarian patties.
Great also with Turkey meat balls .
