Here is one of my favourite soups. Loaded with lentils and vegetables like carrots, tomatoes and kale, it is not only deliciously healthy but also very good for you!

Ingredients:
3/4 cup dried lentils
2 tbsp. vegetable oil
1 onion, chopped
2 cloves garlic, minced
3 carrots, chopped ( about 2 cups)
4 medium tomatoes, chopped
5-6 cups water
1 bunch of Kale, chopped
2 tbsp. tomato paste
1 tsp. sea salt

1 tsp. sea salt
1 tsp vegetable stock powder
1/2 tsp paprika
2 tbsp. minced fresh parsley
1 tsp. dill weed
1/4 teaspoon pepper
sour cream, optional for serving
Rinse lentils and place into a medium saucepan. Cover with water and bring to a boil. Reduce heat and cook lentils until they become soft, (about 20-30 minutes). Set aside.
Add chopped tomatoes and water; bring to a boil. Reduce heat; cover and simmer for 20.
Add chopped kale and cook until kale is tender.
Stir in the tomato paste, salt, parsley, dill weed and pepper and simmer for 5 minutes for flavours to blend.
Serve with sour cream if you like and one (or two) slices of Corn Bread.
Makes: 6 –8 servings

Directions:
Meanwhile place oil and chopped onions into a large saucepan; sauté until translucent; add minced garlic, chopped carrots and sauté 2-3 minutes longer, stirring a few times.
Add chopped tomatoes and water; bring to a boil. Reduce heat; cover and simmer for 20.
Add chopped kale and cook until kale is tender.
Stir in the tomato paste, salt, parsley, dill weed and pepper and simmer for 5 minutes for flavours to blend.
Serve with sour cream if you like and one (or two) slices of Corn Bread.
Makes: 6 –8 servings
