Spiced Apple Coffee Cake

I love when the aroma of apples baking filling the house...

Sometimes, when I'm really busy,  I just want to bake something quick and easy.  This is just one of those recipes; quick and easy. The most time spent was peeling the apples and grating them. The rest is a piece of cake :-)  The Spiced apple ring, just as the name says, it is a flavorful apple coffee cake.   Great snack anytime with coffee, tea or just on it's own.

Apple-ring

Ingredients:

3/4 cup butter, at room temperature
3/4 cup sugar
3 eggs
1-1/2 cup all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp. cinnamon
1/2 tsp  allspice
1/2 tsp cloves
1/4 tsp nutmeg
2 cups grated apples
2 tbsp. milk
1/4 cup sliced almonds

Directions:

Grease and flour an 10-inch round pan or ring mold. Sprinkle the almonds around the base of the pan; Set aside.

Stir together the flour, baking powder, salt, cinnamon, cloves,  allspice and nutmeg; set aside.

In a mixing bowl, cream together butter and sugar until light and fluffy.

Add the eggs, one at a time, beating well after each addition until well combined.

Stir in the grated apples and the milk.

Add the flour and spice mixture and stir just until well combined. Do not over mix.




Apple-ring 1

Spoon the batter into the prepared pan smoothing top with a spoon.

Bake in a preheated oven at 350 F for about 30-40 minutes, until a toothpick inserted into the center comes out clean.

Let cake cool in the pan for 10 minutes, then turn into a plate to cool completely.

To serve, cut into slices.

TIP: For a milder flavor, you can use less spices or use only cinnamon and omit the cloves and allspice.
