Christmas is coming and it was time to do some Christmas baking. I love this time of the year! My house is all decorated for Christmas, so now I can concentrate on doing the things I love and being in the kitchen and baking cookies is one of those things.
The other day I happened to catch a guest in one of the TV shows as she was talking about Christmas baking. Her big idea was how to make different cookies for the holidays using one sugar cookie dough and then adding food coloring to some of the dough. I see this as being a way for little kids to introduce them to baking in a fun way, but as for entertaining....? Wow! seriously? That's what people want to do for their Christmas baking when there are so many wonderful, tasty and easy cookie recipes to choose from? I don't think so! At least, I hope not. I realize that this is a busy time for many but still, there are better ways than using food coloring...Well, anyhow, enough said about it.
I know you are looking for good and tasty recipes (since you are reading this post), and easy and fun to make Christmas cookies, I have more baking ( and posting) to do but until then, I hope you are going to enjoy this traditional Christmas cookie recipe.
These gingerbread cookies have been a part of my Christmas baking for years. They are simple, easy to make, and when the cookies are baking it fills the house with the aroma of Christmas.

Ingredients:
3 eggs
3/4 cup brown sugar
1/2 cup butter, unsalted, softened (at room temperature)
4 tbsp. honey
1/2 tsp. baking soda
1 tsp. baking powder
1 tbsp. lemon juice
1 tsp. cloves
1/2 tsp. allspice
1 tsp. cinnamon
3 cups all-purpose flour
Directions:
In a mixing bowl, beat together eggs and sugar until well mixed.
Beat in butter, honey, baking soda, baking powder, lemon juice, and spices.
Slowly add flour, scraping bowl and mixing until blended. Remove bowl form mixer and using your hands, form into a dough ball.
Cover and set aside for 2 hours.
Take little pieces of dough and form into a balls, then shape each ball to form an oval shape, (or you can leave it round).
Place them on a cookie sheet and bake in preheated oven at 350 F for 10 –12 minutes or until the edges start to brown.
Remove cookies to cooling racks and cool completely. Keep in airtight container.
Makes: 4 dozens

TIP: Cookies can be drizzled with melted chocolate, (or rolled in confectioner's sugar while still warm).
