Dinner Potato Rolls

We  love bread and I love making bread of any kind (or buns)! I love the aroma of baking bread filling the kitchen...and the taste of freshly baked bread spread with butter while still warm... yummy!! okay, I know, you should let the bread cool  before eating it, but sometimes, I just can't resist...?!   :)

This time I baked some soft and delicious dinner rolls using mashed potatoes. Having this recipe on hand, you would never have to think twice about what to do with left-over mashed potatoes.

DINNER POTATO ROLLS RECIPE



INGREDIENTS

4 tsp. yeast
1 tsp. sugar
1/4 cup warm milk
1 tsp. salt
3 cups all-purpose flour
1 cup whole wheat flour
1 cup mashed potatoes
3 tbsp. oil
1-1/2 cups water
1 teaspoons salt
 
DIRECTIONS

Dissolve yeast and sugar in the warm milk; sprinkle some ( a 1/2  teaspoon) of flour on top; let stand until foamy. This will ensure the yeast is working.

In a large bowl, mix 2-1/2 cups of all-purpose flour with the 1 cup whole wheat flour.

In another bowl, mix together (with a potato masher) the mashed potatoes, oil, water and salt. Add the yeast. Stir in flour as much as you can then add the rest of the flour and knead with hands to form a dough.

Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place the dough into a bowl dusted with some flour. Cover with a kitchen towel and let rise in a warm place until doubled, about 1 hour or longer, depending how warm the kitchen is.

Punch dough down. Turn onto a lightly floured surface; divide into 6 portions. Divide each portion into 4 pieces.

Shape each piece into a ball. Place balls on a greased baking sheet, 1/2 inch apart. Cover and let rise for 45-60 minutes or until  doubled.

Bake at 350° for 25– 30 minutes, or until tops are golden brown.

Remove from pans to wire racks.

Makes: about 24 roll
