This is one old time favourite cookie recipe. It is also one of my hubby’s favourite cookies.
The recipe is simple and easy to make. You need only a few ingredients, peanut butter, of course, and a mixer to blend everything together.
Kids can also help and be involved in making these cookies. They can have fun rolling the cookie dough into little balls… This can be a fun activity for the whole family, and what better way to start them in the kitchen… :)

Ingredients:
1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1 egg
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Directions:
In a mixing bowl, cream butter and sugars until creamy. Add peanut butter and egg; beat until smooth.
Combine the flour, baking soda and baking powder; add to creamed mixture and mix well. Place dough in the refrigerator to chill for 1 hour.
Shape into 1 inch balls and place them 2 inch apart on ungreased baking sheets. Flatten each ball by lightly pressing with a fork, (don’t flatten them too much as they spread during baking).
Bake at 350° F for 10-12 minutes or until bottoms are lightly browned. Using a spatula (cookies are soft) remove cookies to cooling rack or a flat surface to set.
Makes: about 4 dozen.
