Salata de boeuf is a traditional Romanian dish, served at all the festive and special occasions. It is made with finely chopped meat, ( beef or chicken), carrots, parsnip, potato, dill pickles and green peas, all folded together with mayonnaise and garnished with pickles or olives.
In spite of its French name, (boeuf, is French for beef), this recipe is of Russian origin, from Salad Olivier or Russian salad.
Served as an appetizer, or just before the soup or main course, it is also often served as a side dish or its own with slices of French bread.
It requires some time for all the chopping and dicing but it’s worth the time and effort. Hope you enjoy it as much as we do :-)

Ingredients:
1 1/2 cups cooked chicken (or turkey) meat, diced
1 1/2 cups cooked, diced carrots
3 cups cooked, diced potatoes
1 cup finely chopped dill pickles
1 cup cooked peas
2/3 cup mayonnaise, plus 2 tbsp.
1/4 tsp. salt, or to taste
Black olives, for garnish
Directions:
Place cubed chicken meat, diced carrots, diced potatoes and chopped dill pickles into a large size bowl. Gently toss them together. Add peas and mayonnaise and salt; stir to mix.
Dish out salad into a serving bowl. Smooth top with a spatula and spread the remaining two tablespoons of mayonnaise on top until covered.
Garnish with black olives. Place in the refrigerator for a few hours before serving.
