Portabella mushrooms sauté is a terrific vegetarian main dish. I made this last week and served it over Quinoa Pilaf and Steamed Vegetables on the side. My husband really liked it, (before, he didn't care for portabella mushrooms) so I was glad for that. I like it! It's so simple yet a really great dish!
It also makes a great side dish for for grilled fish or steak.
Ingredients:
3 tablespoons olive oil
1/2 large onion, chopped
3 cloves garlic, minced
4 Portabella mushroom, sliced in 1inch long and 1/2 inch wide pieces
1/2 tsp. seasoning salt
1/2 tsp. paprika
salt and black pepper to taste
2 tbsp. freshly chopped parsley
Directions ;
Place oil in a skillet over medium heat. Sauté onions and garlic for 2-3 minutes. Add mushrooms, seasoning salt, paprika and cook until mushrooms are soft, for about 15 minutes. Add parsley and season with salt and pepper to taste. Cook for 2 minutes longer.
Serve over Quinoa Pilaf.
