Have you ever found yourself having too many bananas on hand, (specially if they are over riped), and don’t know what to do with them ? Whip up some banana bread.
Recipe is quick, and easy to make.

Ingredients:
1/2 cup margarine (or vegetable shortening)
1/2 cup brown sugar
1/2 cup white sugar
1/2 tsp salt
2 eggs
4 tbsp. milk
1 cup mashed bananas ( about 2 medium )
1 tsp baking powder
1 tsp baking soda
1 1/2 cups flour
1 1/2 cup chopped walnuts
Using an electric mixer, beat margarine, (or shortening) brown sugar, white sugar and salt until creamy. Add eggs, one at a time, beating well after each addition. Add milk , banana, baking powder, baking soda, flour and 1 cup of walnuts.
Pour batter into 2 greased loaf pans. Sprinkle the remaining walnuts on top.
Bake at 350 for 35-40 minutes or until toothpick inserted comes out clean.
Remove from oven and let pans cool for 10 minutes. After that, remove breads to cooling racks.
Makes: 2 loaves
TIP: Once cooled, they can be wrapped and freeze for latter use.
