I have this recipe from my daughter and ever since she first made it, it has become one of our favorite cookies.
Easy to make, they are the perfect little treats for lunch boxes... or just enjoyed at home.

Pecan Cookies
Ingredients:
1/2 cup butter or margarine
2/3 cup brown sugar
1 egg
1/2 tsp vanilla extract
1/2 tsp baking powder
1 1/2 cup flour
1/4 tsp salt
3/4 cup chopped pecans
Directions:
Using an electric mixer, cream together the butter and brown sugar until light and fluffy. Beat in the egg, and vanilla extract.
Mix together flour, baking powder and salt and add it to the creamed mixture stirring with a spatula. Mix in add half cup of pecans. Divide dough in two.
Place dough on a plastic covered surface and shape into a 9 inch roll. Repeat with the rest of the dough. Refrigerate for 2 hours or until firm. At this point, rolls can be wrapped twice and placed in the freezer for up to 3 months. When ready to use, just thaw rolls in the refrigerator. Dough needs to be quite cold and firm to be able to cut into even slices.
Unwrap roll and cut into 1/4 inch slices. Place 1 inch apart on baking sheet. Sprinkle with the remaining pecans. Press gently.
Bake at 350 F for 10-12 minutes or until edges begin to brown. Remove to wire rack to cool.
