I love bruchetta!!
This recipe makes a for wonderful starter or appetizer. I love to add the feta cheese on top, specially when you can warmed them up before serving.
5-6 tomatoes, diced
4 garlic cloves
3 green onions, chopped
4 tbsp olive oil
1 tsp basil
1 tsp Italian seasoning
2 tsp parsley, minced
1/2 tsp salt
1 banquette, sliced
1/2 cup crumbled feta cheese
olive oil, to drizzle
In a medium size bowl, place diced tomatoes. Add crushed garlic, chopped green onions, olive oil, basil, Italian seasoning, parsley and salt. Stir together and leave aside for 2 hours for the flavours to blend.
To serve, cut baguette in bias, arrange then on a baking sheet and drizzle some olive oil, then place spoon full of the mixture on each bread slice, sprinkle feta on top and bake in the oven at 350 for 10-15 minutes, or until starts to brown.
Makes: 20-25 bruschetta
