Rice and Cheese Croquettes

 

Do you have leftover steamed rice from last night's dinner that don't know what to do with? Here is a great recipe that is easy to make and taste delicious! Rice and cheese croquettes.  

I found this recipe in an older recipe book and right away I wanted to try it. I modified the recipe by  leaving out some and adding in some ingredients,  like adding minced garlic and freshly chopped parsley greens. Really easy recipe to make and great for sharing, as an appetizer or just any time you fell you want to make them. I promise they won't disappoint.


Do you know how to make the perfect steamed rice every time? 

Place 1 cup rice and 1-1/2 cup water into a pot and bring to a boil. When boils add a pinch of salt and one teaspoon of butter or oil. Stir and reduce heat to the lowest setting on your stove and set the timer for 15 minutes. When time is up,  remove pot and fluff rice with a fork.  Try it! Works every time!

Remember to cool the rice completely before using it in this recipe.

                                              Rice and cheese Croquettes

INGREDIENTS

2 cups cooked rice (1 cup uncooked)

2/3 cups grated mozzarella or cheddar

2 eggs 

1/2 cup bread crumbs, divided

1 tsp parsley flakes

2 garlic cloves, minced

Salt and pepper, to taste

Oil for frying

 DIRECTIONS

Stir together the rice, eggs,  parsley, garlic, grated cheese, salt and pepper and half the bread crumbs.

Sprinkle some bread crumbs onto the working surface or a board and using a small scoop, place little mounts from the rice mixture, then using your hand,  shape them into balls, roll them in the remaining bread crumbs and place them on the board until all done.

Heat about 1 inch of oil in a frying pan. When hot (add a crumb and if it sizzles its hot)  add them to the oil in a single layer and  fry them  until golden brown on both sides.

Remove to paper towel lined plate. Cool slightly before serving. 

They are delicious alone or you can serve along with a dipping sauce.

Makes 18-20 croquettes
