 Oven Roasted Chicken Thighs

Onions, garlic, potatoes, and chicken come together in this flavorful and tasty dish. An easy recipe that doesn't take much time to throw together. Then, you wait, sit back and enjoy the delicious aroma as the oven does the rest.  Hope you are going to enjoy it as much as we did.



Oven Roasted Chicken Thighs Recipe

INGREDIENTS

2 lb. chicken thighs (8 pieces) with skin on

Salt and pepper

1/2 tsp paprika

2 lb. potatoes (about 6-8)

3 medium onions, cut into wedges

1 head of garlic

2 tbsp olive oil

Herbs like savory, rosemary, oregano, or basil (1 tsp each)

1 tsp caraway seeds, optional

1-2 tbsp vegetable oil, to drizzle on the chicken


DIRECTIONS

Salt and pepper the chicken thighs. Place them on a tray, sprinkle skin with paprika and set aside.

Wash potatoes, cut out blemishes and leave the rest of the skin on. Cut potatoes into wedges or big chunks. 

Scatter the potatoes around on a parchment paper lined roasting pan, add the onion wedges, and the garlic cloves; drizzle olive  oil on top, season with salt and pepper and the herbs of your choice ( I used  savory and rosemary) and stir them around to mix. 

Place the chicken thighs on top of the  potatoes and onions, skin side up.

Sprinkle them with the caraway seeds if using.

Drizzle a bit more oil on top of the chicken pieces and gently, pour 1/2 cup of water over the veggies in the pan.

Place pan uncovered and bake in preheated oven at 375 F for 40 minutes.

When starts to brown (you might need to stir the veggies around (but not the chicken) then  cover pan with a foil and bake another 30-40 minutes or until chicken is done. (If you prefer a crispier chicken and potatoes, and caramelized onions, bake it uncovered).

Remove foil and place pan back into the oven for 5-10 minutes at 400 F to finish the browning and get the skin a bit crispy.

Remove from oven and cover with a foil and let sit to relax for 10 minutes before serving. Delicious!! Your family will love you for it!
