Green Peas Soup with Homemade Noodles


Those that know me, know that I am a soup lover!  My background being east european,  I grew up having soup at our meals daily and it stayed with me to this day. Give me a bowl of soup and a slice of bread and I am good to go. Not only soups are easy to make, they are make a great and nutritious lunch. 



Here is another one of my favorite soups, the Green Peas soup with my easy and delicious homemade noodles. 


Green Peas Soup with Homemade Noodles Recipe

INGREDIENTS
1 onion, chopped
1 tbsp vegetable oil
1 tbsp butter
3 carrots, diced
1 smaller parsnip, diced
2 celery stalks, diced
10 cups water  ( or vegetable stock)
1 tbsp vegeta* seasoning (or  vegetable stock mix)
3 cups fresh or frozen green peas ( about 500 gr.)
2 eggs, divided
4-6 tbsp flour
4-6 tbsp crème of wheat
1/2 cup sour cream
2-3 tbsp chopped dill
1 tbsp chopped parsley
Salt and pepper, to taste

DIRECTIONS
Saute onions in the vegetable oil and butter until translucent. Add a splash of water to prevent burning.

Add carrots, stir while sauteing for 2-3 minutes until color has been released. Add the parsnip, celery,  water, (or stock) and the Vegeta seasoning.  Let vegetable cook until tender (6-8 minutes).

Add the peas. While they come to a boil prepare the noodles by taking 1 whole egg and the white from the second egg (reserve the yolk for later) and 3 tablespoons water and a pinch of salt and beat with a fork until frothy.  Stir in 1 tablespoon at the time of each, flour and cream of wheat, mixing well after each addition until you reach  the consistency of a thick pancake butter. 

When soup starts to boil, place little pieces of the dough into the soup using a spoon dipped into the soup, or use by using a Spaetzle Noodle Dumpling Maker   Let noodles cook for 8-10 minutes.

Meanwhile, add the yolk and sour cream to a small bowl. Stir together until mixed well.  Add to the soup by first adding  a ladle of hot soup to the mix to temper it, them pour the mix into the soup slowly.  

Dress soup with the chopped  parsley and dill, season with salt and pepper to taste and let come to a soft boil.



Serve and enjoy!

 *Vegeta is a popular european dry seasoning that you can usually find in the international food section of your Walmart or supermarket.
