Mini Cheese Rolls
If salty is your thing, you will love this mini, melt in your mouth cheese rolls. They are wonderful with a cup of tea, as an appetizer or any time you crave a salty snack.
They are very easy to make. No, seriously, they are easy and fast, and you don’t have to wait for the dough to rise ( no doubling and all that...) so you can enjoy them in no time at all. Isn't that great!?
1/4 cup milk + 3/4 cup
1 tsp. yeast granules
1 tsp. sugar
2 cups all-purpose flour
1 tsp. sea salt
3 tbsp. vegetable oil
1/2 cup finely shredded mozzarella cheese
1/4 cup butter, softened
1 egg yolk
3-4 tbsp. heavy cream
1 cup finely shredded cheddar+1/4 cup for topping
Dissolve yeast and sugar in ¼ cup milk of warm milk; set aside until becomes foamy.
Place about 1-1/2 cups flour into a mixing bowl of a mixer with dough hooks attachment (or you can beat together using a wooden spoon). Add yeast, the remaining of the milk, oil and salt. Knead on low until smooth then add the rest of the flour and let knead until dough is elastic and smooth (about 5 minutes).
Add the grated cheese and knead until cheese is all blended in.
Remove dough to a floured board. Set aside.
Meanwhile, in a small bowl, mix together butter, egg yolk and enough cream to make into a sauce.
Roll dough out into a 15 inch x 20 inch rectangular. Spread the butter paste over the dough. Sprinkle with 1 cup of the cheddar cheese. Cut in half lengthwise and rolled both up, (starting on the long side) into 2 smaller jelly rolls.
Cut each jelly roll into 1 inch thick slices. Place slices, about 1 inch apart on parchment lined baking sheets. Sprinkle remaining cheese on top of each roll.
Bake at 350 F for about 18 minutes or until cheese on top has melted and edges start to brown.
Makes about 36 mini rolls
