Apple and Fig Muffins


I like freshly baked muffins and I do enjoy them from time to time, warm  with a dollop of butter…Yummy!

This muffins are loaded with delicious pieces of figs and apples in every bite. The heavier texture and hint of cinnamon makes this muffins perfect for winter baking.   Enjoy them for breakfast or any time you want a midday snack.  Fast, easy and a delicious treat for you and your family.

Ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup milk
1/4 cup bran
1 egg
1/2 brown sugar, lightly packed
1 banana, mashed (about 1/4 cup)
1/4 cup plain yoghurt
1/3 cup vegetable oil.
2 cups diced peeled apples
1-1/2 cups chopped figs

Directions:
Grease 12 large muffins pan or line with paper cups, as I did; set aside.

Combine flours, baking soda, baking powder, salt and cinnamon in a large bowl.

Measure milk; add bran; stir and let sit for 15 minutes.

In another bowl whisk together egg and sugar; stir in banana, yoghurt and oil. Add the soaked bran, apples and figs.

Stir in the flour and mix with a spatula until all moistened. Spoon batter into prepared muffin pans, (cups will be very full as you see in the picture above).

Bake in pre-heated oven at 350° for 30 minutes or until toothpick inserted in the centre comes out clean.

Makes: 12 muffins
