Hush Puppies

This hush puppies take little time to make. They are great taken to a picnic, wonderful served with fish as a side dish or just eaten as a snack.


1 cup cornmeal
1/2 cup flour
1 tsp. baking powder
1/2 tsp. sea salt
1 egg
1/2 cup buttermilk
1/4 cup vegetable oil
1/2 red pepper, finely diced
4 green onions, chopped
2 tbsp. shredded mozzarella cheese
Oil for frying

In a medium size bowl, stir together cornmeal, flour, baking powder and salt.

In a small bowl whisk together egg, buttermilk and oil. Stir in diced pepper and onions.

Add to the dry ingredients and stir; Add cheese and stir  until all combined. 

Place oil into a frying pan about 1/4 inch deep.

When oil is hot, drop teaspoonful's of batter.

Fry until golden brown on both sides.

Remove to a bowl lined with paper towel to drain excess grease. 

Serve warm.

Makes: 2-1/2 dozens
