Creamy Pina Colada Popsicles


With warmer weather (finally here),  home made popsicles can be a great treat. Easy to make. Just pour your favourite juice or smoothie into popsicle molds and freeze,  or use the recipe bellow for a creamy and tasty frozen treat.

Ingredients:
1/2 cup whipping cream, whipped
1 tbsp. icing sugar
1-14 oz. (400 ml.) can crushed pineapple
1/4 cup sugar
1 tbsp. lemon juice
1-14 oz. (400 ml.) coconut milk, cold *
 
Directions:
Whip together whipping cream and icing sugar until stiff. Set aside.

In a blender, process pineapple, sugar, lemon juice and coconut milk until smooth.

Add whipping cream and stir to mix. 

Spoon into 12 popsicle molds and freeze for at least a 4-5 hours or overnight.

Remove popsicles from molds and enjoy.

Makes: 12 popsicles

* For best result, refrigerate coconut milk overnight before whipping.

TIP; For easy removal of popsicles, dip the mold in warm water for a few seconds.
