Oven Baked Salmon Fillet

Baked Salmon; easy, fast and good for you.

1 large Salmon fillet about 2 lb.
2-3 tbsp. oil
1 lemon - juice freshly squeezed
1 tsp. lemon pepper
salt and freshly ground black pepper
1 tsp. parsley

Place the oil into a pan and spread it all over the bottom of the pan. (I used a a 9-inch by 13-inch glass pan).

Place salmon fillet, skin down in the pan. Pour freshly squeezed lemon juice all over the fillet.

Sprinkle with lemon pepper, salt, freshly ground black pepper and parsley.

Cover with a piece of foil and bake at 350 F for 30-40 minutes (depending on the thickness) or until fish is no longer pink and meat is flaky when checked with a fork.

Served with Parsley Potatoes  if you like.

Makes: 8 servings
