Creamy Tomato Soup
Are you looking for an easy soup recipe? Look no further. This soup is truly one of the easiest soup to make.
It is one of my daughter's favourite soups! She likes it with spaetzels (noodles), but sometimes, when I didn't have the time to make the noodles, we just ate it with soup crackers. Works well and still delicious.
Tomato soup with spaetzles.
2 tbsp. vegetable oil
2 tbsp. flour
1/2 tsp. paprika
1 cup cold water
1- 48 oz. can of Heinz tomato juice
2-3 tbsp. sugar
1 cup milk
Salt and pepper, to taste

Heat oil in a large pot; add flour and stir to make a roux. Remove from heat; let cool for 2 minutes; add paprika and stir to mix. Slowly add 1 cup of cold water and mix with a whisk to break any lumps, until creamy.
Add tomato juice stirring until all blended in. Stir in sugar; cook for 5 minutes, stirring occasionally.
Add milk: stir. Season with salt and pepper to taste and cook for 2 minutes. Ladle soup into the plate; serve with spatzels on top.
