Raspberry Italian Soda

A refreshing beverage for a hot summer day.


2 tsp. raspberry syrup (or more, to taste) Recipe Below
Mineral or carbonated water
Ice cubes
Place syrup into a glass. Fill half-way with mineral or carbonated water; stir to mix. Top glass with ice cubes.

Garnish with mint leaves and serve.

Raspberry Syrup


2 cups raspberries 
1 3/4 cups granulated sugar
1 tablespoon lemon juice

Puree raspberries in food processor or blender; strain to remove seeds.
Place strained raspberry puree/juice into a pot. Add sugar and lemon juice and bring to a rolling boil. Boil for one minute, (after the mixture comes to a rolling boil) and skim foam. Remove from heat and let cool slightly. Pour into a bottle and store in the refrigerator.
