Pasta with Rose Sauce


Feeling like having pasta tonight?  You might like to try this recipe.
This is an easy rose sauce recipe, that takes little time to make  and is absolutely delicious!

If you are anything like us, (my husband likes white sauce, I on the other hand, prefer the tomato sauce) you will like this sauce recipe. Rose sauce is a combination of white sauce and tomato sauce together.  Finally, there is a pasta sauce that we can both enjoy! 

I used organic vegetable noodles, Creste di Gallo, (from Costco) but you feel free to use what ever noodles you like. I find that it goes well with vegetable rotini noodles too. Very easy to make. In fact, this is the easiest rose sauce recipe ever!!!  Give it a try and... Enjoy!!

INGREDIENTS

3 cups dried vegetable pasta ( I used Organic Vegetable Creste di Gallo )
2 tbsp. olive oil
2 garlic cloves, minced
1/2 cup cream cheese
1/3 cup heavy cream
2 tbsp. grated Parmesan cheese
1/2 tsp. garlic powder
1-25 oz. jar (750 gr.) organic tomato and basil pasta sauce (or similar)
Salt and pepper, to taste
Freshly grated Parmigiano Reggiano, for serving

DIRECTIONS

Cook pasta according to package instructions. Drain the water, (reserve some for later) and set the pasta  aside, covered to keep warm. 

Sauté garlic in the olive oil, just for a few seconds, to release flavor. Stir in cream cheese to melt; Add heavy cream and the parmesan cheese, and bring to a boil.

Slowly, while stirring, add the tomato sauce. Season with salt and pepper. Add some of the pasta water if you need to thin the sauce. Cook for a few minutes to blend flavors. 

To serve, dish out pasta on a plate. Pour the sauce on top then freshly grated Parmigiano Reggiano cheese. 

Garnish with fresh basil leaves, if desired.

Add a  Caesar salad of your choice to complete the meal.
