Greek Garden Salad

This is my version of a the greek salad. I use chopped tomatoes, peppers, cucumbers and sheep feta, when I have, but regular feta will do also. The black Kalamata olives with their distinctive flavour make it officially a Greek salad :-) Hope you enjoy it as much as I do.


3 cups thorn romaine lettuce
2 large tomatoes, chopped
1 cup chopped cucumber
1/2 cup chopped green pepper
1/2 cup chopped sweet orange or red pepper
1/4 cup thinly sliced green onions
1/2 cup cubed feta cheese
1/2 cup Kalamata black olives
1/4 cup Greek salad dressing

Place thorn lettuce in a large bowl. Add chopped tomatoes, cucumber, peppers, sliced onions, feta and olives.

Just before serving, add salad dressing; toss to coat and serve.

Yield: 8 servings.
