Garlic Roasted Baby Potatoes


An easy to make side dish.
I used to pan fry baby potatoes... before I came up with this, much easier version...

Just toss everything together and let the oven do the rest. I  like that! Talk about something easy.

We like to eat them with garlic-barbecued chicken and home made garlic sauce, (mujdei) a Romanian speciality that is usually served with chicken,  polenta (mamaliga) and fish… yummy!!

Ingredients:
2 tbsp. olive oil
4-4 cloves garlic, minced
1/2 tsp. seasoning salt
1/2 tsp. Mrs. Dash seasoning blend
2 tbsp. minced parsley
1/4 tsp. oregano
2 pounds (1 kg) small yellow and red potatoes

Directions:
In a large bowl, mix together olive oil, garlic, seasoning salt, Dash seasoning, parsley and oregano.

Wash potatoes well; pat dry and cut in 2 ( or into quarters, if they are bigger) to have about 1 inch big sizes. Add potatoes to the olive oil and seasoning mixture in the bowl and stir to coat.

Spread into a 9-inch by 13-inch pan, or a baking sheet; cover potatoes with aluminium foil.

Bake at 350 F. for 30-45 minutes or until potatoes are fork tender. Serve while warm.

Variation: For more unique flavour, try it also with  adding fresh (or dried)  rosemary to the oil and herb mixture.
