Garlic and Herbs Roasted Potatoes


Looking for a fast and easy side dish? Look no more. I've got the recipe for you. This roasted potato side dish is full of flavor and you can pair it with most anything, meats or vegetarian.

Just toss everything together and let the oven do the rest. I  like that! Talk about easy.

INGREDIENTS

2 tbsp. olive oil
4-4 cloves garlic, minced
1/2 tsp. seasoning salt
1/2 tsp. Mrs. Dash seasoning blend
2 tbsp. minced parsley
1/4 tsp. oregano 
2 pounds (1 kg) small yellow and red potatoes

DIRECTIONS

In a large bowl, mix together olive oil, garlic, seasoning salt, Dash seasoning, parsley and oregano.

Wash potatoes well; pat dry and cut in 2 ( or into quarters, if they are bigger) to have about 1 inch big sizes. Add potatoes to the olive oil and seasoning mixture in the bowl and stir to coat.

Spread into a 9-inch by 13-inch pan, or a baking sheet; cover potatoes with aluminum foil.

Bake at 350 F. for 30-45 minutes or until potatoes are fork tender. Serve while warm.

Variation: For more unique flavor, try also adding some rosemary to the oil and herb mixture.
