Tender Bits Rice Casserole

This  rice casserole made with soy meat makes it an  ideal vegetarian alternative to chicken.
 It is simple, and delicious!

Ingredients:
1 cup brown rice
1 onion, chopped
3 tbsp. oil
2 carrots, diced
2 celery stick, diced
1/2 cup white rice
1 tsp Mrs. Dash Seasoning
1 tbsp. chicken bouillon or similar seasoning
1 tbsp. fresh parsley, minced
1 can Tender Bits*, drained and diced

Place brown rice into a pot; cover with 2 –1/2 cups of water; add a dash of salt and let cook for 25 minutes or until rice is cooked.

Place onions and oil into a large pot, sauté onion in oil; add carrots, celery, rice, seasoning and bouillon. Add water and cook for about 15 minutes or until rice is cooked.

Mix in tender bits and cook for 4-5 minutes adding a bit of more water if needed.

Stir in parsley and brown rice. Mix well, cover and remove from heat. Let stand for 10 minutes.

To serve, empty rice into a covered serving casserole.

Serve with steamed vegetables or salad on the side.
