Portabella Wraps



 Portabella Wrap

Ingredients:

¼ cup water
2 tbsp. lime juice
3 tbsp. vegetable oil
2 cloves garlic, minced
1 tbsp. Italian seasoning
1 tsp. Mrs. Dash, Original seasoning
1/2 tsp. salt
¼ tsp. ground nutmeg
¼ tsp. pepper
1/8 tsp. cayenne pepper
2 Portobello mushrooms, cut into 1/4-inch slices
2 red peppers, thinly sliced
1 medium red onion, thinly sliced
2 small zucchinis, cut into ¼-inch slices
6 Greek flat bread pita (6 inches)
6 tbsp. of Hummus spread or Tzatziki Sauce
1 cup shredded Mozzarella cheese (or other *)
sliced peppers and lettuce, optional

In a medium size bowl mix together water, lime juice, oil, garlic, seasonings, salt, nutmeg, pepper, and cayenne.

Add the sliced mushrooms, peppers, onions, and zucchini. Cover bowl and refrigerate overnight.

Spread veggie mix into a large non-stick skillet; cook vegetables until tender.

Spread warm pita bread with one tablespoon of hummus and place 2–3 tablespoons of veggies in the middle of the bread. Sprinkle with cheese. Add more sliced peppers and lettuce if you like.  Fold both sides up to form a wrap. Serve immediately.

Makes: 6 servings

* Use tofu cheese slices for a vegan choice
