Princess Loaf

A vegetarian loaf that is great for potlucks.


Princess Loaf
 
2 cups rice, cooked and cooled
1 onion, chopped
3 tbsp. vegetable oil
1 cup frozen mix vegies (peas, carrots, corn)
1 stalk celery, chopped
1 can sliced mushrooms, drained and finely chopped
1 cup frozen veggies, (like peas, carrots, corn) – Optional
1 tsp chicken seasoning
1 tsp vegetable seasoning or stock
1 tsp poultry seasoning
1 tsp dried parsley
Salt and pepper, to taste
2 eggs, well beaten
1/2 to 1 cup milk
1 can mushroom soup
1 cup ground walnuts
1 cup bread crumbs

Sautee onions in the oil. Add celery, mushrooms, mix veggies,  spices, salt and pepper, to taste. Cook until vegetables  become soft. Set aside to let it cool.

Put the rice into a large bow. Add the sautéed vegetable mixture. 

Wisk eggs and milk together. Add mushroom soup and stir into the rice mixture. Stir in walnuts and bread crumbs.

Pour into a 9x13 inch greased casserole (or a glass loaf pan) and bake at 350 F for 40-55 minutes.

Serve with mashed potatoes and gravy.
