Ingredients:
6 large eggs
1 cup sugar
1/2 cup Unsalted Butter, softened
1 1/2 tsp. baking powder
1 tbsp. lemon juice
1 tsp vanilla
1 tbsp. lemon rind
1 to 1/4 cup flour
1 cup chopped walnuts
Preparation:
Grease a 9x13 baking pan and preheat oven to 350F.
Separate egg yolks from the whites, and place yolks into a large mixing bowl.
Add the sugar and, mix on medium speed until light yellow and creamy.
Add the butter, tablespoons at a time while continue mixing.
Mix in baking powder, lemon juice, vanilla and lemon rind.
Beat egg whites until stiff and fold into the egg mixture alternating with the flour. Pour into prepared pan.
Sprinkle walnuts on top and bake for 15-20 minute, or until toothpick comes out clean.
Let cool for 10-15 minutes, then using a cookie cuter, cut into half moon shapes.
Remove half moons to a plate . Dust each with icing sugar.
TIP: For a variation replace 2 tablespoons of flour with 2 tablespoon of cocoa; mix it into the batter together with the flour
