Split-Peas Cream Soup

If you follow my blog, you probably know by now that I like soups. I hope you like them too because here is another one of my family's favorite soups. Easy to make, using simple ingredients that you might have already at home, and economical.

Enjoy!

1 1/2 cups dry split peas
1 onion, chopped
2 tbsp. oil
2 carrots, chopped
2 sticks celery, chopped
1/2 tsp paprika
1/2 tsp. garlic powder
1/2 tsp. marjoram
1/2 tsp. Italian seasoning
1/2 tsp. Chicken seasoning
1/2 tsp. basil
Vegeta Seasoning (or other vegetable seasoning)
Salt and pepper, to taste

Wash peas and soak them in water, for a few hours, then cook them until soft.

Saute onions; add carrots and celery. Add water, about 2 quarts  and add paprika, garlic powder, marjoram, Italian seasoning, chicken seasoning, basil and vegeta seasoning  (or other vegetable seasonings). Cook for 15-20  minutes until vegetable become soft. Mix with the cooked split-peas. Season with salt and pepper, to taste and cook for 2 minutes.

Remove from stove and let it cool, until just warm (but not hot).

Using a blender,  blend soup, (a few ladles at a time) until all smooth and creamy. Pour into a pot. Repeat with the remaining soup until all is blended.

Serve with crackers.
