Apple Savarin Cake


I love Savarins! It used to be one of my favorite desserts and it still is! 
This recipe is inspired by the Savarin Cake only its a simpler, easier version with a delicious and flavorful apple layer on top. If you like apples, you're going to love this recipe. 
Hope you like it as much as I do.



Enjoy with a dollop of whipped cream. 

INGREDIENTS
 
6-7 medium apples, peeled and sliced
 
2 tbsp. sugar
 
1/4 cup water
 
5 eggs
 
5 tbsp. sugar
 
3 tbsp. bread crumbs
 
2 tbsp. flour
 
Syrup:
 
1/2 cup water
 
1 tbsp. sugar
 
1 tbsp. orange peel jam
 
1 tbsp. rum flavoring, optional
 
2 cups whipped cream
 
1-2 tbsp. candied orange peels, for garnish, optional


DIRECTIONS
 
Butter a 9-inch by 13-inch baking pan ( used a glass one). Spread the sliced apples in the pan; sprinkle with sugar and water. Cover and bake at 350 for 35-45 minutes or until apples are baked. Remove pan from the oven.


Meanwhile, separate egg yolks from egg whites and place each into  separate mixing bowls.
 

Cream egg yolks with sugar until has increased in volume and becomes pale yellow in color.  Stir in the flour and bread crumbs.


Beat egg whites until soft peaks form. Fold into the egg yolk mixture.

Spread the batter over the apples, smoothing top. Return pan to the oven and bake for  15-20 minutes, until golden brown. Remove from oven and run a knife around the edges of cake. Let cool completely.

 
For the syrup, place water and sugar into a small pot. Bring to a boil. Remove from heat and stir in orange peel jam and rum flavouring, if using. Drizzle syrup  over the cake .


To serve cut into squares and invert squares  onto a plate ( so the apples are on top). Garnish with whipping cream and candied orange peels if you like.
