Apple Savarina Cake
I love Savarinas! It was one of my favourite desserts that I would get from the pastry shop back in the day, in Romania.
This moist cake is like savarinas, only with apples so it is less sweet.
6-7 medium apples, peeled and sliced
2 tbsp. sugar
1/4 cup water
5 tbsp. sugar
3 tbsp. bread crumbs
2 tbsp. flour
1/2 cup water
1 tbsp. sugar
1 tbsp. orange peel jam
1 tbsp. rum flavouring, optional
2 cups whipped cream
1-2 tbsp. candied orange peels, for garnish
Butter a 9x13 inch glass pan. Spread sliced apples in the pan; sprinkle with sugar and water. Cover and bake at 350 for 35-45 minutes or until apples are baked. Remove from the oven.
Meanwhile, separate egg yolks from egg whites and place each into a mixing bowl.
Mix egg yolks with sugar until light in color and creamy. Stir in flour and bread crumbs.
Beat egg whites until soft peaks form. Fold into the egg yolk mixture. Spread over the apples and bake for 15-20 minutes, until golden brown. Remove from oven and run a knife around the edges of cake. Let cool completely.
For the syrup, place water and sugar into a small pot. Bring to a boil. Remove from heat and stir in orange peel jam and rum flavouring, if using. Drizzle syrup over cake .
To serve cut into squares and invert on a plate ( so the apples are on top). Garnish with whipping cream and candied orange peels.
