Vegetable Patties

Ingredients:

1 1/2 cup diced carrots, boiled
2 potatoes, diced and boiled
1 1/2 peas, boiled
2 eggs
1 tsp. vegeta
1 tbsp. parsley
1 cup grated cheese
6-8 tbsp. flour
Salt and pepper, to taste
 
In a large bowl,  mix together  carrots, potatoes and peas.

Add eggs, vegeta and parsley. Stir to mix. Add cheese and about six  tablespoons of flour. Add salt and pepper.

Place the remaining flour into a bowl. Drop rounded  tablespoon of mixture  into the flour, then,  with hands, shape them into patties.

Place a small amount of oil onto a frying pan and fry them until brown, turning once.
