I have this recipe from one of my romanian friends, Camelia, who made this wonderful appetizers for one of my gatherings. Last sunday I made this appetizers and took them along to a birthday party. They were enjoyed by all.
The recipe calls for Bisquit Mix. I made my own mix and I include the recipe for you to try.
Zucchini Squares
Ingredients:
4 large eggs
1/2 cup vegetable oil
1/4 tsp salt
1/2 tsp seasoning salt
1 tsp parsley
1/2 tsp oregano
1/2 tsp garlic powder
3 cups grated zucchini, unpeeled
1/2 cup finely chopped onions
1/2 cup grated medium cheddar
1/4 cup grated parmesan
1 1/4 cup biscuit mix* (see below)
In a medium size mixing bowl, beat eggs until frothy. Add the oil, slowly while beating until mixture is creamy. Mix in the salt, seasoning salt, parsley, oregano, garlic powder. Remove beaters and stir in the grated zucchini, onions, cheddar cheese, parmesan and biscuit mix.
Pour into a greased and floured 9x13 pan. Spread evenly and bake at 350 F oven for 40-45 minutes, or until top is golden brown. Remove from oven and let stand 10 minutes before cutting into squares.
Serve warm or cool.
Makes; about 35 squares
* My Biscuit mix;
1 cup flour
1/4 cup margarine
1 1/2 tsp baking powder
1/2 tsp salt
Place flour into a small bowl. Cut margarine into flour, with a pastry cutter until coarse. Mix in baking powder and salt. Set aside.
