Pumpkin Mousse

I want to wish all my American family and friends a Happy and Blessed Thanksgiving!!

This is a repost of a quick, easy and delicious pumpkin mousse recipe. A great dessert to finish the turkey feast.

My daughter is obsessed with everything pumpkin…pumpkin latte, pumpkin cheesecakes… She got me into all this pumpkin craze too, so here is one of her favourites that satisfies her pumpkin cravings, Pumpkin mousse.

Ingredients:
1/3 cup white chocolate chips
2 tbsp. milk
3 oz. mascarpone or cream cheese, softened
3 tbsp. confectioners’ sugar
1/3 cup pumpkin pie filling
1 tbsp. cinnamon
1 tsp. allspice
2 tsp. ginger
1 cup heavy whipping cream, whipped
Grated dark chocolate, for garnish

 
Melt chocolate with milk. Stir until smooth. Cool to room temperature.

In a medium bowl, beat mascarpone (or cream cheese) and confectioner’s sugar until smooth.

Beat in pumpkin, cinnamon, allspice and ginger.

Beat in the melted chocolate.

Fold in the whipped cream.

Spoon into bowls. Garnish with grated dark chocolate.


TIP: For a lighter version, replace whipping cream with Nutriwhip.
