Swiss Mushrooms Cups

 
This is for all you mushroom lovers out there...and even if you are not, this is so easy to make you might just consider it making it, just for the fun of it. It can go both, as an appetizer or as a side dish, whatever the need might be.

1 1/2 lb. white mushrooms

2 tbsp. olive oil

2 cloves of garlic, crushed

1 tbsp. mixed herbs seasoning

3-4 green onions, sliced

1/2 cup thinly cubed Swiss cheese

Salt and pepper, to taste

Scrub and wash mushrooms and break out the stems from each mushroom.

In a medium mixing bowl pour the olive oil. Add crushed garlic, salt and pepper and herb mix. Mix together. Add the mushroom cups and  stems and mix gently to coat.

Grease a baking pan and spread out mushrooms stems and cups, with the hole facing up.

Fill mushrooms with sliced green onions then top it with the cubed cheese. Bake in the oven at 350, covered for 15 minutes, then uncovered for another 30 minutes. Watch so they don’t dry out.  Remove to a covered casserole dish until ready to serve.
