Haystack Salad

Try this salad for your next meal. Easy to make, this is wonderful  for lunch or supper, specially on those hot, summer days when cooking around a hot stove, is just not the thing that you want to do. It's also great for a picnic.
Recipe can be doubled and tripled to feed a crowd. It's light but filling in the same time. You may adjust the quantities in the recipe  to suit your individual likes and needs. This is the easiest thing ever to make. Try it.


What you will need;

2— 13 oz. (398 ml)  cans of browned beans  (I used vegetarian beans in tomato sauce)
1– 1 lb. (454gr.) bag of tortilla chips
1 cup shredded mozzarella cheese
4 cups sliced lettuce, romaine or iceberg
1 cup cottage cheese
1 cup sour cream
5  tomatoes,  chopped into small cubes
1 –430 ml. jar of Salsa

Empty the 2 cans of beans into a medium size pot and  place it on medium heat until hot and bubbling.

Place the rest of the ingredients on the table and everyone helps themselves and make their own salad by stacking the items on their plate,  hence the name "haystack".

To make the salad; Place 2 (or more)  handfuls of chips on a plate , top with  3or 4 tablespoons of beans,  then, 1 tablespoon of shredded cheese, lettuce, 1 or 2 teaspoons  each of cottage cheese and sour cream, (more or less)  2 tablespoons of chopped tomatoes and salsa. Enjoy!

TIP: Other toppings that you might like to try; sliced avocados, chopped cucumbers, chopped red or orange peppers and black olives.

Serves: 4 persons
