Parsley Potatoes

Potatoes are one of nature's most versatile foods.

Potatoes are rich in minerals that we need for efective brain and mussle functioning. They help satisfy our hunger and healthy boiled potatoes are actually three times as satisfying as fried potatoes. They can curb appetite for eating sweets and unhealthy foods that lead to weight gain.

 Parsley Potatoes


This is a wonderfully easy side dish to make that goes well with chicken, beef or fish as well as vegetarian patties.   Most nutrients in potatoes are found just under the skin and new potatoes, with their skin intact are the best option.  



 

Ingredients:
6 medium size potatoes, (or 2 lb new potato nuggets)
2-3 tbsp oil
2 tbsp parsley, chopped
1/2 tsp seasoning salt
salt and pepper, to taste


Wash and scrub potatoes. Place them all into a large pot and pour enough cold water to cover them. Place pot on medium heat and boil covered until fork insert easy (about 40 minutes for medium potatoes, less if you use nuggets).

Drain off water and let them cool.  Cut each potatoes in 8. (nuggets, leave them whole).

Place oil in a pan and sauté parsley. Add a splash of water, seasoning salt and saute  stirring for 1-2 minutes. Add the potatoes and stir gently so the potatoes don't break. Season with more salt and pepper to taste.
