Chocolate Cream Cake


Another one of my own recipes. This cake is inspired from the way my mother used to make a cake. It is quite easy to make. In fact, you might not even want to use a boxed cake mix ever again after tying this recipe. It is not too sweet either (I like to use as little  sugar as possible), you may increase the sugar in the filling if you like it sweeter. I made this cake a couple of times for church potlucks  and it was gone in no time at all.  I've been asked for the recipe, so I decided to post it.
 

Ingredients:
          8 eggs, separated
          8 Tbsp. Sugar
          8 Tbsp. Flour
          Pinch of salt

Mix egg yolks, sugar and salt until becomes light in color and creamy.

Beat egg whites until soft peaks form.   Add flour to the creamy yolks and fold in the egg whites.
Pour the batter into a greased and floured, 9x13 pan ( or a round pan, if you want a round cake)

Bake at 350 F for about 20 –25 min. or until toothpick comes out clean .
Let it cool completely in the pan. 

Filling;
3 Tbsp. Flour
3 Tbsp. Cocoa
50 gr. Milk chocolate, chopped
1 1/2 cup milk
4 Tbsp sugar
1 tsp. rum flavouring

In a saucepan mix together flour, sugar and cocoa. Add milk, slowly mixing after each addition to break out any lumps, then add more milk to form a sauce. Cook on medium low heat stirring constantly, when hot, mix in the chocolate and continue cooking until starts to bubble and becomes thick as a pudding.

Remove from heat, let sit for one minute, than mix in the rum flavouring. Let it cool completely.

250 gr. unsalted butter, softened
4 tbsp. icing sugar

Using an electric mixer, beat together butter and sugar until light and fluffy, then add, one spoon at the time from the chocolate filling until all is incorporated. Set aside.

Invert cake onto a board. Cut it horizontally in 2 to obtain 3 layers.

 Fill the layers with this filling leaving about 1/2 cup for the top layer. Spread filling on top and make swirl design with your cake spatula (as shown in the picture) or sprinkle shaved or grated chocolate on top, if you like.
