Pan Fries with Feta


This makes for a great brunch or just a good, hearty breakfast. Breakfast, it is after all, the most important meal of the day!

Ingredients:
6      medium size potatoes
1/3    cup of grated feta
4       tbsp of oil
         Salt and pepper, to taste

Peel potatoes, wash and pat them dry with a paper towel. Cut them in 1/2” slices, then again cut them across into 1/2” strings as for French fries.

Place oil in a large frying pan and spread out potatoes and cook on medium heat, turning them over as they brown. Add a bit more oil if necessary.   Season with salt and pepper. 


Cook covered, for about 20 minutes. Stir from time to time.
When done, sprinkle with the grated feta cheese. Stir and remove from heat.
Serve with your choice  of links or breakfast sausages (as shown in the picture) or sunny side up eggs. This is also great for supper too; just add a favorite salad.

Serves 4 people

TIP; Add a few tablespoons of water, halfway through, to keep the oil from burning. It also prevents the potatoes from drying out.
